How to Prepare Soya Evbarie/Ogiri Sauce–Made Simple
Soya Evbarie is made by boiling and de-coating soya wrap the clean,de-coated soya beans is clean leave put the wraps in a cellophane bag in a warm cupboard for two or three days. The soya beans will fermented and the texture will be soft.
Blend the fermented smooth and use in the place of soya powder in the above soya sauce recipe.Use meat or fish stock for testier soya ogiri or soya Evbarie sauce
Miya Kuka (6 portions)
Ingredients
90g or cup kuka powder
200g dried fish of any kind
1kg beef
50g onions (chopped)
1 teaspoon dried pepper
150ml palm oil
1 tablespoon iru( local seasoning)
1 tablespoon of crayfish (grind)
1litre water
Salt to taste
Method
- Wash seasonal and cook meat until it soft
- Heat the palm oil,onions, pepper,and meat,fry for 7 minutes
- Add Crayfish and fish,add also a litre of water.
- Allow to boil for 15 minutes, stir and remove the meat and fish.
- Add Kuka Powder and stir a wooden spoon
- Pour in the meat and allow to cook for further for 5 minutes
