- Fry only a few pieces of food at a time, because too many will lower the temperature of the fat or oil
- Allow oil to attain the correct temperature of between 180°c -205°C
- A frying pan or a friture should not be more than three – quarter's full
- Any wet foods, e.g potatoes, should always be well dried before fried.
- Fats should be strained after use
- The fats used for frying should be free from moisture, free from strong tested and should have a high decomposition temperature.
- They may be oil e.g. olive,groundnut, soyal beans or corn oil, or soft oil,e.g. Lards, cooking fats or clarified drippings.
- A piece of onion removes raw smell of ground oil and also clears or clarifies it
- Avoid covering fried food while hot to avoid or prevent it from getting soggy

- It a fast method of cooking.
- Food cooked in this way are tasty and attractive.
- There is no loss of soluble nutrients.
Disadvantages Of Frying
- Frying requires skills and is dangerous, unless done carefully
- Frying is only suitable for more expensive cuts of meat
- Fried Food is not easily digested
